Egg, Turkey, Bacon and Sweet Potato Hash
1 brown organic egg
3?4 cup egg white, frozen
2 pieces Willie Bird turkey bacon 3?4 cup sweet potato, diced
3?4 cup Yukon gold potato, diced 1 tablespoon shallots, chopped
1 teaspoon extra virgin olive oil Kosher salt to taste
Step 1: Preheat oven to 450 degrees. Wash potatoes and shallots.
Step 2: Dice potatoes into half-inch cubes and chop shallots. Step 3: Combine potatoes and shallots in a bowl and toss in
olive oil. Add kosher salt to taste.
Step 4: Place the mixture on a baking sheet, add the turkey bacon, and roast for 17 minutes, removing the bacon after 5 minutes or until it’s lightly browned.
Step 5: Mix together whole egg, egg whites, and kosher salt to taste.
Step 6: Add to a heated, non-stick pan and cook to desired doneness.
Step 7: Place eggs on top of cooked hash mix and serve. Give it flavor: Add fresh herbs like rosemary or thyme
